Instructions

  • Thicken the Mixture - In a small bowl, mix the cornstarch with 2 tablespoons of cold water or milk to create a slurry. Slowly add the slurry to the saucepan while stirring continuously. Cook over low heat until the mixture thickens (about 5-7 minutes). Remove from heat and stir in the vanilla extract.
  • Add the Raspberries - Mash the raspberries with a fork and stir them into the pudding. For a smoother texture, blend the raspberries before adding them.
  • Chill the Pudding - Pour the mixture into dessert cups and let it cool. Cover and chill in the refrigerator for at least 1-2 hours to set.
