Ingredients
  

  • 2 cups all-purpose flour For the Dough
  • 2 large eggs For the Dough
  • 1 tbsp olive oil For the Dough
  • A pinch of salt For the Dough
  • 1 cup ricotta cheese For the Filling
  • 1/2 cup grated parmesan cheese For the Filling
  • 1 cup spinach (cooked and chopped) For the Filling
  • A pinch of nutmeg For the Filling
  • Salt and pepper to taste For the Filling
  • 2 tbsp unsalted butter For the Sauce
  • 4-5 fresh sage leaves For the Sauce
  • Salt and pepper to taste For the Sauce

Instructions
 

  • Prepare the Dough:
    Mix flour and salt in a bowl. Make a well in the center and crack the eggs into it. Add olive oil.Gradually mix until dough forms. Knead for 8-10 minutes until smooth. Wrap and let rest for 30 minutes.
  • Prepare the Filling:
    Combine ricotta, parmesan, spinach, nutmeg, salt, and pepper in a bowl. Mix until smooth.
  • Roll and Cut Dough:
    Roll out dough thinly using a rolling pin or pasta roller. Use a heart-shaped cookie cutter to cut out pairs of heart shapes.
  • Assemble Ravioli:
    Place a small amount of filling in the center of one dough heart. Cover with another heart and seal edges using a fork.
  • Cook Ravioli:
    Bring a large pot of salted water to a boil. Gently add ravioli and cook for 3-4 minutes or until they float.
  • Prepare the Sauce:
    Melt butter in a pan over medium heat. Add sage leaves and cook until fragrant. Season with salt and pepper.
  • Serve:
    Drizzle sage butter sauce over cooked ravioli. Garnish with grated parmesan and fresh herbs.

  • For a vibrant touch, use beet or spinach juice in the dough for natural coloring.
