Prepare the Dough:Mix flour and salt in a bowl. Make a well in the center and crack the eggs into it. Add olive oil.Gradually mix until dough forms. Knead for 8-10 minutes until smooth. Wrap and let rest for 30 minutes. Prepare the Filling:Combine ricotta, parmesan, spinach, nutmeg, salt, and pepper in a bowl. Mix until smooth. Roll and Cut Dough:Roll out dough thinly using a rolling pin or pasta roller. Use a heart-shaped cookie cutter to cut out pairs of heart shapes. Assemble Ravioli:Place a small amount of filling in the center of one dough heart. Cover with another heart and seal edges using a fork. Cook Ravioli:Bring a large pot of salted water to a boil. Gently add ravioli and cook for 3-4 minutes or until they float. Prepare the Sauce:Melt butter in a pan over medium heat. Add sage leaves and cook until fragrant. Season with salt and pepper. Serve:Drizzle sage butter sauce over cooked ravioli. Garnish with grated parmesan and fresh herbs.
